Ricotta Pics

There was a ricotta recipe post at the beginning of the blog, in the data dump phase. Here are 2 making of pics:
Milk, salt, lemon zest, blood orange zest
Once it splits in to curds and whey, you let it sit out for a couple of hours to further congeal. The cheese mass starts to sink a little.

After that you use a slotted spoon and put it in a collander, no need for cheesecloth. Let it drain for at least 8 hours or so.
