Leftover Chicken I: Chicken & Olive Juice

I got a bunch of chicken breasts on the bone the other day, roasted them, saved the bones for stock. Now I have to eat the meat; I like chicken stock more than chicken, especially white meat...

Last night I warmed up a cold chicken breast in about 1/2 c of the juice left over from a jar of organic olives. Not a triumph or a failure, kinda interesting. It was nice with a little bit of leftover salsa fresca de Tammy to cut the saltiness. Plus there's the whole 'olive juice'/'i love you' chintz....
